Day 3 – Christmas Tree Cookie Lollies

It wouldn’t be TPW 12 Days of Baking Christmas without a biscuit on a stick 😉

This year I’m going 3D for Day 3 with Christmas Tree Cookie Lollies!

You will need:

1 x batch of non-spread biscuit dough, recipe here

A set of graduated star cookie cutters (Lakeland have a set if you don’t already)

Wooden lolly sticks

Royal icing – white & green

Sprinkles for decoration – coloured pearls are ideal

White edible sparkles

A little festive ribbon!

You need 4 star shaped biscuit cutters, graduated in size.  I’m sure you have these in your cutters box!

Preheat the oven to 180c (fan)/200c/Gas Mark 6.

Get your biscuit dough made up and roll half of it out fairly thickly this time – about 4-5mm in depth.

For each Christmas tree cut out a star using the largest and the second largest cutter.

Set the biggest one on top of the slightly smaller one, off-setting the points of the star.

Roll a small ball of dough by hand and place it on top in the middle.

Insert the lolly stick down through the centre of the ball and transfer them to a lined baking tray.

Bake a tray of double stars on sticks in the oven for 8 -10 minutes until golden brown around the edges.  Before you put them in the oven check that the star sizes are the right way round with the biggest on the top, remember they’ll be turned the other way up on assembly.

With those baked allow them to cool on the tray for 5 minutes before carefully transferring to a wire rack to cool completely.

Roll out the remaining dough and for each Christmas tree cut out 2 of the smallest stars and one of the medium.

Cut one of the smallest stars in half and discard the base portion.

Set them onto a lined baking tray, put the half stars on a tray of their own.

Bake the full small and medium stars for 6-7 minutes and the half stars for 4-5 minutes.

Cool a little on the trays before transferring to a wire rack to cool.

Now for the assembly.  Mix up some thick royal icing and colour half of it green.

Add it to a piping bag.

You’ll need something to stand them up in whilst you work.  I found an empty egg box worked just right.  Cut slits in the base with a sharp knife and insert the sticks.

(Don’t worry if a couple of your sticks have come loose from the base biscuits – fix them back together with a good blob of royal icing and allow to set)

Add a good bulb of royal icing to the stars on sticks, you need some height in it to form the tree shape.

Carefully add on the next star size – position it centrally to keep it level.  And keep off-setting the star points as you build them up.

Prepare the tops – add a line of icing to the base of the half star and set it onto the smallest star centrally.  Leave these and the base parts to set for 10 minutes.

Time to put them together – another good bulb of royal icing and place the tops in position.

Christmas trees are now shaped so leave them for 30 minutes just to firm up.

Time for the decoration – add in snowy flurries of white royal icing and add some pearl sprinkles for decoration.

A sugarpaste star is added to the top of the tree (I couldn’t find any star sprinkles!)

A good sprinkle of white sparkles and I’ve added a bow to the sticks too – that’s it, 3D Christmas Tree Biscuits!
