Day 3 of The Pink Whisk 12 Days of Christmas and today it’s Salted Caramels – the perfect gift for someone special (or indeed you – I won’t tell anyone you made them!)
Ingredients:
175ml double cream
135g caster sugar
85g golden syrup
55g demerara sugar
45g butter
1/2 tsp vanilla extract
1 tsp sea salt flakes (Maldon are excellent for this)
Plus
1/2 tsp sea salt flakes for sprinkling
Makes 36 (which is never enough)
Right then, these are really really easy, honestly and they are very very delicious (you can tell how many I’ve eaten just by that last sentence 😉
You’ll need to get some kit together, a sugar thermometer, 2 silicone ice cube trays,a large heatproof jug (Pyrex) dice the butter and put it in a small bowl with the vanilla extract. You’ll also need a pastry brush and a little bowl of water.
Put the 1 tsp sea salt flakes in a small bowl too.
Into a large pan, make sure it is big enough as when the mixture boils it rises up a fair bit, place the double cream, caster and demerara sugar and syrup.
Heat it over a gentle heat, stirring to mix them together evenly.
When it starts to boil, take out your stirring spoon and using the pastry brush dipped in a little water wash down the sides of the pan. This removes any sugary crystals which you don’t want leaving on the side of the pan as they can cause your caramels to go grainy.
Let the mixture bubble away on a gentle boil over a medium heat – no stirring or swirling, just let it do it’s thing.
Check the temp using the sugar thermometer – it needs to get to 121c. This takes about 8- 10 minutes depending on how high a heat you are using. It will quite quickly get to 112c and will then climb slowly to 121c.
As soon as it reaches 121c straight off the heat and add the butter and vanilla extract to the pan. Carefully please as it can sputter once the butter hits the hot caramel.
Get a spatula in and stir it up well, remembering of course that it is red hot!
Once it’s smooth add the 1 tsp of sea salt flakes and stir it through again.
Transfer the mixture into the large heatproof jug. Pour the caramel into the recesses of the silicone icecube tray (trying not to get it everywhere!)
If the caramel is thickening as you are trying to pour out then put the jug in the microwave and give it a quick blast to heat it up and it will soften enough so you can pour it again.
Now set the trays to one side to set. It should set off fairly quickly as long as you got to the right temperature (30 mins to an hour).
Allow them to cool fully.
Now they’re cool pop the trays into a freezer bag. No I haven’t gone mad! Put the whole lot into the freezer for 10 minutes. Because the caramels are chewy if you tried to pop them out then they’d pull out of shape.
Check them after 10 minutes and see if you can pop them out of the tray just as you would an icecube. If they are still pulling out of shape, freeze them for another 10 minutes.
Pop out all the caramels from the icecube tray onto a sheet of non-stick baking paper.
Grind up the 1/2 teaspoon of sea salt flakes with your fingers so that it is very fine and sprinkle over the tops of the caramels.
Now they need wrapping up! You can cut squares of non-stick baking paper to wrap them in but I’ve found that the mini rolls of baking parchment from Lakeland (for lining the sides of cake tins) are the perfect width.
Wrap them all up (minus the few that you’ve eaten along the way) and fill pretty jars or store them in an airtight container at a cool room temp and they’ll last for 3 weeks. (They will keep longer but I’ve found the quality of them starts to deteriorate after that)
And don’t forget to come back tomorrow for another Christmassy recipe!

You are a genius, made a simialr recipe a few weeks ago but it said to make in one large block and cut into pieces. Was a nightmare and then when i’d cut it up it stuck together again. Caramel’s my family’s absolute favourite. Salted Caramel however is unventured territory. Unless you count the odd Salted Caramel Mocha or two (which I don’t). Sweets are much more satisfying for the ol’ sweet tooth 😉

See, now these look so easy and gorgeous and delightful but I can’t find the part where you add the butter and it splashes hot caramel on to your hand / all over the splashback, and then spend the next 10 minutes with your hand under a cold tap / cleaning the worksurface – that’s normal right?

Have you ever had a problem with the salt not dissolving properly? I have the ‘Cornish Sea Salt’ flakes, but they just clump together and stick to the spoon! I event tried grinding them with pestle and mortar first to see if they dissolved better as a fine powder… no!
Not with the Maldon but how bizarre – I have some Cornish and will try that next time I make them and see what it does! x

I made some of these today as i was going to give them away as an early christmas gift however they never made it into the packaging because as every good baker knows you need to taste your finished product however my tasting didnt stop at one (i say i was checking for consistency) and the whole batch was gone so now got another batch on the go.

I’ve just made these (bored on my day off) and they’ve not set hard (although I’m sure my thermometer was up to 121c!
Is there anything I can do or are they officially soft sweets?

They are on the softer side but chewy – I didn’t want them to be teeth pullers – you can remelt and reheat the mixture to a higher temp for a harder set. I did that a few times playing about with heat to temps and it works a treat x

They look great. Love the idea of the baking parchment rolls too. I didn’t know lakeland did that. Will have to look out for that one too. My mum wraps up her fudge in the cellophane bags that you get on cards and ties these up with a ribbon. That would work for these individually wrapped caramels too. The dentists will be rubbing their hands in January!
Have been looking forward to getting home today to see what the recipe is – and it was worth the wait! Beautiful bakeware too.

They do need wrapping really otherwise the air gets to them and they start to turn sticky, I’d suspect they’d stick together in the bag! The trays I used were from Nordicware but I can’t find the same ones online anywhere – these on Amazon are very similar http://tiny.cc/3xvxow Xx

These will make fantastic teacher presents. Usually make cranberry and white chocolate “advent” cookies – give them one for each day from when they get the present up to Christmas but have been told that they never last that long! This will be something different and we can give them enough for more than one a day!

Do you need a heavy bottom pan for these? Ive tried making them, and they popped out from the silicone trays fine, but they aren’t stay firm and just turning into a splodge! Help!
If its not too late Megan, get the mix back in a jug or pan and reheat it till boiling for a couple of mins in a pan (or 1 min in the microwave) and then try them again, they should set up for you with a bit of extra heat x

I made these and they are delicious! Just a quick question though – are they meant to be very soft and chewy or should they be fairly hard? Not sure I got them up to a high enough temperature before taking them off the boil!

I’ve just made these, nice and chewy just the way I like them,very easy and very very tasty. I love salted caramel. I only got 27 out of the mixture so I will obviously have to make them again till I get the required amount won’t I. They didn’t take very long to make either. Thank you.

Oh. My. Goodness. These are divine. So much better than anything you’d ever buy. I had to give them all away just to get them out of the house before Christmas. Am making another batch tonight. I poured mine into a 20cm square baking tin, lined with parchment, and cut with a big, sharp knife when they were no longer tacky. Oiling the knife blade periodically helped. Fab recipe, thanks so much

Do you have a corn syrup? That is a good substitute or failing that a glucose syrup. If you don’t have silicone trays use a metal tin and line with a nonstick baking paper x
Hi Ruth..just a quick question. Is there a way to cheat the process by making the caramel via a can of condensed milk in a pan (banoffee pie stylee) – and then simply pouring the toffee back into a pan..heating through…adding in the salt and then setting into ice cubes? I’m thinkimg of trying it tonight as want caramels but dont have all the individual ingredients. Or is the recipe totally different? Wondered if you’d ever given it a try yourself?
