Chocolate Caramel Shortbread

Officially hailed as ‘one of the best things you’ve ever made Mum!’  I reckon this is a recipe you don’t want to miss out on.  A twist on the classic Millionaires Shortbread but with a brilliant chocolate caramel instead.  Four full batches in our house this week (and I’m sorry to admit I only gave one of those away) – better add the ingredients to your shopping list!

Banoffee Pie

This was the birthday bake of request from my youngest, Fin, just recently. Lots of you asked for the recipe so of course here it is.  Whilst not strictly baking, I’m sure you’ll forgive me! I’m including instructions to make the toffee layer from sugar/butter and cream so you don’t have to use condensed milk if you don’t want to.

Spiderweb Millionaires Shortbread

Individual Millionaires Shortbread with a hint of Halloween – Yes please!

Ingredients:

Shortbread

80g butter

40g caster sugar

140g plain flour

Caramel

90g light muscovado sugar

90g butter

315g condensed milk  –  use a squeezy bottle for no waste, if you use a tin and have some left over try it drizzled over icecream, add it to tea/coffee/hot choc for a creamy sweetener or indeed eat it with a spoon ;) – Thank you Hevz Tasty Treats for the top tips Xx

Topping

200g milk chocolate

50g white chocolate

Day 8 – Toffee Popcorn!

In our house, Christmas is a time for snuggling  up on the sofa together in front of a roaring fire.  Baked Toffee Popcorn is always a welcome addition to our Christmas Movie watching (plus it’s one of the last few Saturdays before the big day, so I know you’ll need something quick and easy to rustle up today!)

Ingredients:

125g popping corn

1 tbsp vegetable/sunflower oil

100g soft light brown sugar

115g butter

1 tbsp golden syrup

3 tbsps water

2 disposable foil roasting trays.

On the third day of Christmas The Pink Whisk sent to me……Christmas Monkey Bread

Christmas Monkey Bread

It’s Monkey Bread time….but this time with a Christmas twist – I couldn’t resist.  This is my entry into the Merchant Gourmet Christmas Chestnut Challenge!  (If you don’t want the Christmas twist the original version is here.)



Ingredients:

For the dough

500g Strong White Flour

2 tsp Mixed Spice

1 1/2 tsp Salt

55g Butter

2 Eggs beaten

2 tbsp Honey

15g Dried Yeast (3 tsp)

175ml Milk
For the sugar coat

150g Caster Sugar

2 tsp Mixed Spice
For the Sauce

200g Butter

100g Dark Brown Sugar
Plus 1 x regular sized jar of ready made mincemeat

1 x 100g pack of Merchant Gourmet Whole Chestnuts you can find stockists through their website – Merchant Gourmet but most major supermarkets sell them at this time of year.

Gruesomely Vile Halloween Cupcakes

Okay then, these cupcakes are delicious (honestly) and don’t just have to be for Halloween – they’re otherwise known as mint choc chip cupcakes only these have been morphed into hideously horrible cakes for Halloween!

Makes 12.

Ingredients:

Cakes
280g plain flour
1 tsp baking powder
110g caster sugar
200g chocolate chips, plain
2 eggs, large
225ml milk
6tbsp oil (rapeseed or sunflower)
1tsp peppermint essence
green food colouring (optional)

Filling
1/2 can of Carnation Caramel (Dulche de Leche)
red food colouring (optional)

Frosting
125g butter
250g icing sugar, sifted
1tbsp milk
Food colouring (optional)

Preheat the oven to 180c Fan/200c/Gas Mark 5.

Caramel Cake with Crushed Daim Bars
Ingredients:

Cake

300g butter

180g dark muscovado sugar

1/2 397g tin Carnation Caramel (Dulche de Leche)

6 eggs

320g self raising flour

Filling

125g butter

250g Icing Sugar

1 spoonful of Caramel (from the tin)

Icing

250g Icing Sugar

1 spoonful of Caramel (from the tin)

10ml water

2 Daim Bars
I thought I would use this cake to test out my new tin.
