I love a good burger on a toasted Brioche bun, trouble is it’s not something you seem to be able to buy easily. So, with us definitely heading towards a spell of BBQ weather I’ve slightly adapted by Brioche recipe (which you’ll find in my new Bread Making book) so I can get some burgers on the go!

At last! It appears to be BBQ weather, and whilst I’m stuck for Father’s Day ideas I figured a BBQ might be just the thing to treat your Dad. Now BBQ’s don’t naturally lend themselves to baking but a batch of these flour tortillas will certainly go down a treat.
I love making these when I have the time, you can’t beat curry night in our house with homemade Naan bread.
There’s 2 options for you with a recipe for plain or Garlic and Coriander Naan Bread
300g strong white bread flour
1 tsp salt
2 tsp fast action yeast
165ml milk (170g)
4 tbsps natural yoghurt (60g)
1 tbsp vegetable or sunflower oil
1/2 to 1 tsp kalonji seeds (onion/nigella seeds)
Plus 25g melted butter
Garlic & Coriander Naan
1 clove of garlic, crushed
2 tbsps chopped fresh coriander
Place all the dry ingredients into a large mixing bowl.
How about a Chocolate Mincemeat Bear Claw for Day 7 of The Pink Whisk 12 Days of Christmas – a great alternative to a Mince Pie!
You will need:
1/2 x qty of Danish Pastry – recipe here
1 x qty of Chocolate Mincemeat recipe here
1 egg, for egg wash
A little icing sugar to dust

Three ways to use this dough – as a loaf, whirls or the traditional buns – who could resist?
315g strong plain white flour
1/2 tsp mixed cake spice
1/2 tsp salt
2 tsp dried fast action yeast (or 1 sachet)
25g caster sugar
1 egg, large
zest of 1/2 and orange
60g dark brown sugar
1 1/2tsp cinnamon
A little water icing to glaze (optional)
Makes 1 x 1lb loaf, 10 whirls or 8 buns
Place the flour, mixed spice, salt, caster sugar, orange zest, yeast, egg and currants in a large bowl.
But did you know that it’s really easy to make it at home too?
1 x Quantity of Basic White Bread Dough (recipe here)
35ml warm water
1/2 tsp dried fast action yeast
1/2 tsp caster sugar
1/2 tsp vegetable or sunflower oil
15g rice flour (rice flour also makes really great crunchy shortbread if you were wondering what else you could use it for!)
Make the bread dough as per the instructions here and allow to rise in a bowl until doubled in size.
