Something a little bit summery for you on the blog today, Chorizo & New Potato tarts.
This has to be one of the very best things to come out of my kitchen – you may have to save me from a Cheese & Onion pie addiction!
I have a great friend, Dor who shared a Cheese & Onion pie with a great group of ladies recently and I have dreamt about it ever since, plus with Father’s Day approaching and knowing my Dad loves this pie as much as I do I knew I had to give it a go.
So this week, as a Birthday celebration and the fact that I am 21 again I’m hosting an Afternoon Tea for some of my lovely Mummy friends. I’ve spent a week cleaning (yes it was that bad) and now it’s on to the fun bit – baking!
There’s nothing more my boys love than a steaming bowl of hearty homemade soup with a good helping of bread for dipping in it. This cheese and onion bread is delicious dunked, on it’s own or made into a butty!
1 onion, diced
25g butter (1 knob)
450g strong white plain flour
200g mature cheese, grated
1tsp caster sugar
1tsp fast acting dried yeast
25g butter, melted
Sautee the chopped onion gently in the pan with the butter until soft.
